Ingredients

  • 2 eggs
  • 2/3 cup brown sugar
  • 2/3 cup corn syrup
  • 1/4 cup dark rum
  • 2 tablespoons butter or margarine
  • 1 teaspoon vanilla extract
  • 2 cups toasted pecans
  • 1 cooked pie shell

Instructions

  1. In a medium bowl, combine eggs, brown sugar, corn syrup, dark rum, melted butter, and vanilla extract.
  2. Fold in toasted pecans.
  3. Pour the mixture into a cool cooked pie shell.
  4. Bake at 350°F (175°C) for 45 to 50 minutes, until just set.
  5. Cool on a wire rack before serving.
  6. Can be made ahead and stored at room temperature for up to 24 hours.
