  • 1/4 c. dark molasses
  • 1 oz. unsweetened chocolate
  • 1/4 c. margarine
  • 1 tsp. cornstarch
  • 1/2 c. cold water

Instructions

  1. Combine rye and white flours in a large bowl.
  2. In a separate large bowl, thoroughly mix 2 1/3 cups of the flour mixture, sugar, salt, whole bran cereal, crushed caraway seed, instant coffee, onion powder, crushed fennel seed, and undissolved dry yeast.
  3. Add water, vinegar, dark molasses, and unsweetened chocolate to the dry mixture and mix well.
  4. Melt margarine and add to the mixture, stirring until combined.
  5. In a small bowl, dissolve cornstarch in cold water and add to the dough, mixing thoroughly.
  6. Knead the dough until smooth and elastic, about 10 minutes.
  7. Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
  8. Preheat oven to 375°F (190°C).
  9. Punch down the dough and divide into two equal portions.
  10. Shape each portion into a loaf and place in greased loaf pans.
  11. Bake for 60 minutes or until the loaves sound hollow when tapped.
