Ingredients

  • 2 c. chopped onion
  • 1/4 c. margarine
  • 1 1/2 c. self-rising cornmeal
  • 1 Tbsp. sugar
  • 1 Tbsp. chopped fresh sage
  • 1 c. grated Cheddar cheese
  • 2 well-beaten eggs
  • 1/4 c. milk
  • 1/4 c. vegetable oil
  • 1 c. sour cream
  • 1 can cream-style corn
  • pinch of cayenne pepper

Instructions

  1. Saute chopped onions in an iron skillet with margarine until tender.
  2. Combine self-rising cornmeal, sugar, and chopped fresh sage in a mixing bowl.
  3. Mix the sautéed onions into the cornmeal mixture.
  4. Add grated Cheddar cheese, well-beaten eggs, milk, vegetable oil, sour cream, cream-style corn, and a pinch of cayenne pepper to the mixture.
  5. Mix until well combined.
  6. Pour the batter into a greased baking dish or skillet.
  7. Bake in a preheated oven at 375°F (190°C) for about 30 minutes or until golden brown and a toothpick inserted into the center comes out clean.
