Ingredients

  • 1 (15 1/2 oz.) can salmon
  • 1/4 lb. fresh mushrooms
  • 5 Tbsp. butter
  • 1/4 c. flour
  • 1/2 c. half and half
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper
  • 1/4 c. grated Parmesan cheese
  • 2 (10 oz. each) pkg. frozen asparagus spears

Instructions

  1. Drain salmon, reserving the liquid, and break into chunks.
  2. Sauté sliced mushrooms in butter until tender.
  3. Blend in flour with the mushroom and butter mixture.
  4. Add half and half and the reserved salmon liquid.
  5. Cook and stir until the mixture thickens.
  6. Add salt, white pepper, Parmesan cheese, and salmon chunks.
  7. Heat gently until combined and heated through.
  8. Spoon the casserole over hot cooked asparagus spears.
  9. Garnish with toast triangles and serve.
