Ingredients

  • 8 oz canned salmon, drained
  • 2 eggs
  • 1/2 cup skim milk
  • 1/4 cup finely chopped celery
  • 2 tablespoons dehydrated onion flakes
  • 2 tablespoons finely chopped parsley
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon paprika

Instructions

  1. Remove and discard salmon bones and skin.
  2. Mash the canned salmon.
  3. Beat egg yolks with milk.
  4. Add finely chopped celery, dehydrated onion flakes, chopped parsley, salt, and pepper to the egg mixture.
  5. Stir the mixture into the mashed salmon and mix well.
  6. Beat egg whites until stiff but not dry.
  7. Gently fold the beaten egg whites into the salmon mixture.
  8. Spoon the mixture into a nonstick 9 x 5 x 3-inch loaf pan.
  9. Sprinkle with paprika on top.
  10. Bake at 350°F (moderate oven) for 45 minutes or until the mixture is firm.
  11. Garnish with sliced egg before serving.
