A savory microwave salmon ring featuring tender flaked salmon, fresh vegetables, and a crispy bread crumb crust, ideal for quick, elegant appetizers or light meals.

Ingredients

  • 2 beaten eggs
  • 1 (1 lb.) can red salmon, drained and flaked
  • 1 c. fine dry bread crumbs
  • 1/2 c. chopped celery
  • 1/4 c. chopped green pepper
  • 2 Tbsp. minced onion
  • 1 Tbsp. lemon juice
  • 3/4 c. milk

Instructions

  1. In a 1 1/2-quart casserole, combine all ingredients and mix well.
  2. Move mixture away from the center and place a glass in the center to shape the ring.
  3. Cook, uncovered, 8 minutes or until mixture around the glass is set.
  4. Remove the glass and invert the ring onto a serving plate.
