Ingredients

  • 24 Maryland oysters in shell
  • 2 Tbsp butter or margarine
  • 2 Tbsp flour
  • 2 cups milk
  • 2 Tbsp shredded Swiss cheese
  • 1 tsp grated Parmesan cheese
  • 1 tsp Worcestershire sauce
  • 1/4 tsp nutmeg
  • 1/8 tsp pepper
  • salt to taste
  • 5 oz chopped spinach

Instructions

  1. Open oysters, letting remain in deep half of shell.
  2. Melt butter in a 1-quart saucepan, blend in flour, and slowly add milk. Simmer for 5 minutes, stirring occasionally.
  3. Add shredded Swiss cheese and grated Parmesan cheese; stir until cheese melts.
  4. Stir in Worcestershire sauce, nutmeg, pepper, and salt.
  5. Cook spinach and squeeze out excess moisture.
  6. Blend spinach into cheese sauce and let mixture cool.
  7. Top each oyster with 1 tablespoon of spinach mixture.
  8. Sprinkle with Parmesan cheese and bake at 400°F for 10 to 15 minutes.
