Ingredients

  • 2 lb. pork shanks or ham hocks
  • 1 qt. water
  • 1 medium onion
  • 1 bay leaf
  • 5 peppercorns
  • 1 sprig parsley or 1/4 tsp. dried parsley flakes
  • 2 c. meat broth or bouillon
  • 8 to 12 oz. bacon or smoked link sausage
  • 1/4 c. raisins or 2 Tbsp. sugar (optional)
  • 3 Tbsp. lard or margarine
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Cook pork shanks in water in a 5-quart kettle for 20 minutes. Skim off foam.
  2. Add onion, bay leaf, peppercorns, and parsley. Cook about 45 minutes or until the meat is tender.
  3. Remove meat from broth.
  4. Strain broth and return to kettle.
  5. Remove meat from bone and discard bone and skin.
  6. Dice the meat.
  7. Rinse sauerkraut with cold water and drain.
  8. Add diced meat, drained sauerkraut, beef broth, bacon (if using), and raisins (if using) to the kettle.
  9. Simmer for 1 hour.
  10. Mix lard and flour to a smooth paste and stir into the simmering soup.
  11. Cook and stir over medium heat until thickened.
  12. Add salt and pepper, and serve. Optional: serve with plain boiled potato dumplings.
