Ingredients

  • 1 lb. pork sausage
  • 1 c. chopped onion
  • 1 clove garlic, crushed
  • 1 (4 oz.) can undrained tomatoes
  • 1 (4 oz.) can green chiles, undrained
  • 1 c. frozen whole kernel corn
  • 1 tsp. chili powder
  • 1 c. yellow cornmeal
  • 2/3 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. sugar
  • 1 egg, beaten
  • 2/3 c. milk
  • 1/4 c. vegetable oil

Instructions

  1. Cook the pork sausage until browned.
  2. Add chopped onion and crushed garlic to the sausage and cook until the onion is tender.
  3. Stir in drained crumbled sausage, undrained tomatoes, undrained green chiles, frozen corn, and chili powder.
  4. Simmer the mixture for 20 minutes.
  5. Spoon the sausage and vegetable mixture into a greased baking dish.
  6. Prepare the cornbread batter by mixing yellow cornmeal, flour, baking powder, salt, sugar, beaten egg, milk, and vegetable oil.
  7. Pour the batter over the sausage mixture in the baking dish.
  8. Bake until the cornbread is golden brown and cooked through.
