Ingredients

  • 2 Tbsp. butter
  • 1 medium onion, finely chopped
  • 1 to 2 ribs celery, finely chopped
  • 1 green pepper, finely chopped
  • 1 (12 oz.) pkg. sausage roll
  • 1/4 lb. mushrooms, sliced
  • 1 to 2 cloves minced garlic
  • 1/4 tsp. basil
  • 1/4 tsp. thyme
  • cayenne or Tabasco sauce to taste
  • 1 cup rice

Instructions

  1. In a large skillet, melt butter.
  2. Saute onion, celery, and green pepper until soft.
  3. Add sausage until browned and crumbly.
  4. Add mushrooms, garlic, basil, and thyme; cook about 3 to 5 minutes.
  5. Stir in rice.
  6. Add chicken stock and bring to a boil.
  7. Reduce heat to simmer and cook until liquid is absorbed, about 20 to 25 minutes.
