  • 1/8 tsp. dried thyme leaves
  • 1 bay leaf
  • 6 small potatoes, pared and halved
  • 6 medium carrots, pared and chopped in chunks
  • 6 white onions, peeled

Instructions

  1. In hot oil in a Dutch oven, brown beef cubes well on all sides. Remove and set aside.
  2. Add chopped onion, green pepper, and celery to the Dutch oven.
  3. Saute until tender, about 8 minutes.
  4. Return beef to the pan.
  5. Add parsley, garlic, tomato sauce, wine, bouillon cubes, salt, pepper, thyme, bay leaf, and 2 cups of water.
  6. Bring to a boil.
  7. Reduce heat and simmer, covered, for 1 1/4 to 1 1/2 hours.
