Ingredients

  • 4 pork blade steaks
  • 2 Tbsp. shortening
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 can condensed beef broth
  • 2 medium onions, sliced
  • 2 to 3 medium potatoes, pared and quartered
  • 3 to 4 carrots, pared and quartered
  • 1 tsp. dried basil, crushed
  • 2 Tbsp. flour

Instructions

  1. In a skillet, brown the pork blade steaks on both sides in shortening.
  2. Pour off the drippings from the skillet.
  3. Season the steaks with salt and pepper.
  4. Reserve 1/4 cup of the condensed beef broth; pour the remaining broth into the skillet.
  5. Add sliced onions, quartered carrots, and quartered potatoes to the skillet.
  6. Sprinkle dried basil over the vegetables and meat.
  7. Cover the skillet and simmer for 45 to 60 minutes or until the meat and vegetables are tender.
  8. Drain the juices from the skillet and add water to make one cup of liquid for gravy.
  9. Combine the remaining broth with flour to make a slurry, then add to the pan juices.
  10. Cook, stirring constantly, until the mixture thickens and bubbles.
  11. Pour the gravy over the cooked meat and vegetables before serving.
