  • 1/4 cup green pepper

  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons grated onion
  • 1 tablespoon butter
  • 1/4 teaspoon baking powder
  • 1 tablespoon dried parsley flakes
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons catsup
  • 1/4 teaspoon hot sauce
  • 3 slices bacon

Instructions

  2. Remove skin and bones from the salmon if desired, then flake the salmon with a fork.
  3. Brown 1 1/2 cups of saltine cracker crumbs in 1/4 cup of melted butter in a large skillet, then set the mixture aside.
  4. Combine the flaked salmon, reserved liquid, remaining 1/2 cup of unbrowned cracker crumbs, eggs, green pepper, grated onion, salt, pepper, baking powder, parsley flakes, Worcestershire sauce, hot sauce, and catsup.

  10. Serve the salmon loaf with Cucumber Cream Sauce.

Tips & Substitutions

For a different flavor profile, consider adding fresh herbs like dill or thyme to the salmon mixture. If you're out of saltine crackers, crushed cornflakes or breadcrumbs can be used as substitutes. Ensure the salmon is well-drained to avoid excess moisture. For added texture, fold in some chopped vegetables such as carrots or celery.

Serving Suggestions

Serve the savory salmon loaf with a side of mixed greens or roasted vegetables for a balanced meal. It pairs beautifully with Cucumber Cream Sauce, adding a refreshing contrast to the richness of the loaf. For a heartier option, consider serving it alongside mashed potatoes or a grain salad for a complete dinner experience.

Storage & Reheating

Leftover salmon loaf can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place slices in a preheated oven at 350°F (175°C) for about 15-20 minutes, or until warmed through. You can also microwave individual portions for quick reheating, though the texture may vary slightly.

Frequently Asked Questions

Can I use fresh salmon instead of canned?

Yes, you can use fresh salmon! About 1 pound of cooked, flaked fresh salmon will work well. Just ensure it's properly seasoned and cooked before incorporating it into the recipe. Adjust the liquid accordingly if you use fresh salmon to maintain the desired consistency.

Is there a way to make this recipe gluten-free?

Absolutely! To make a gluten-free version, substitute the saltine cracker crumbs with gluten-free breadcrumbs or crushed gluten-free crackers. Ensure all other ingredients, including Worcestershire sauce and catsup, are gluten-free as well. This will keep the flavor intact while accommodating dietary needs.

What can I serve as a side dish with the salmon loaf?

Consider pairing the salmon loaf with a light salad or steamed vegetables for a refreshing contrast. For a comforting touch, creamy mashed potatoes or a quinoa salad would complement the loaf well. You could also serve it alongside a classic American recipe like Chopped Ham Rolls for variety.
