Ingredients

  • 1 lb. fresh or frozen scallops

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/8 tsp. pepper
  • 1/2 cup milk
  • 1 cup liquid from scallops
  • 1 (3 oz.) can mushrooms, chopped
  • 2 Tbsp. grated cheese
  • 2 Tbsp. chopped pimento
  • 1 Tbsp. parsley

Instructions

  1. Cover scallops with cold water and bring to boiling.
  2. Reduce heat and simmer for 2 minutes.
  3. Drain scallops, reserving 1 cup of liquid.
  4. Slice scallops into 1/4-inch thick pieces.
  5. Cook chopped onion in 3 tablespoons of butter until tender.
  6. Blend in 3 tablespoons of flour and 1/8 teaspoon of pepper.
  7. Add the reserved scallop liquid and 1/2 cup of milk.
  8. Cook and stir until the mixture thickens.
  9. Remove from heat and stir in chopped mushrooms, grated cheese, chopped pimento, chopped parsley, and scallops.
  10. Pour the mixture into a 1 1/2-quart casserole dish.
  11. Sprinkle with 2 tablespoons of shredded cheese.
  12. Top with potato chips.
  13. Bake at 350°F (175°C) for 20 to 25 minutes until bubbly and golden.
