Ingredients

  • 6 Tbsp. butter
  • 1 leaf celery, diced
  • 2 onions, diced
  • 1 1/2 lb. potatoes, washed and diced finely
  • 1 Tbsp. salt
  • 2 1/2 c. water
  • 1 lb. scallops (or imitation crab meat)
  • 1 pt. whipping cream
  • 1 Tbsp. chopped parsley
  • pepper
  • 1 c. Sauterne wine

Instructions

  1. Saute diced celery and onions slowly in melted butter until onions are transparent.
  2. Add diced potatoes, salt, pepper, Sauterne wine, and water to the pot.
  3. Bring to a boil, then add imitation seafood (scallops or crab meat).
  4. Bring back to a boil, then reduce heat and simmer until potatoes are soft.
  5. Heat whipping cream to a rolling boil in a separate pan.
  6. Add the heated cream to the chowder and stir in chopped parsley.
