  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped onions
  • 2 Tbsp. all-purpose flour
  • 2 cups skim milk
  • 1 dash Tabasco
  • 2 oz. Swiss cheese
  • 2 oz. Parmesan cheese
  • 10 oz. deveined shrimp

Instructions

  1. In a 10-inch nonstick skillet, stir 1 tablespoon margarine until bubbly and hot; add broccoli florets, sliced mushrooms, and chopped onions and cook, stirring quickly and frequently, until vegetables are tender but crisp. Using a slotted spoon, remove vegetables from skillet and set aside.
  2. In the same skillet, heat the remaining tablespoon margarine until bubbly and hot.
  3. Stir in 2 tablespoons all-purpose flour and cook, stirring for about 1 minute.
  4. Gradually stir in 2 cups skim milk and a dash of Tabasco at medium heat, stirring constantly until the mixture is smooth and thickened.
  5. Add 2 ounces each of Swiss and Parmesan cheese and cook, stirring frequently, until melted.
  6. Return the sautéed vegetables to the skillet, add the seafood (shrimp and scallops), and 2 cups cooked linguine; toss to combine.
  7. Reduce heat to low and cook until thoroughly heated.
  8. Sprinkle with 1/2 teaspoon salt, stir to combine, and serve.

Tips & Substitutions

For a creamier sauce, consider adding a splash of white wine when cooking the vegetables. If you don't have Swiss cheese, Gruyère is a great alternative. You can also substitute the shrimp with scallops or crab for a different seafood flavor. If you’re looking for a lighter option, use low-fat milk or a dairy-free alternative. For added flavor, try a sprinkle of lemon juice before serving.

Serving Suggestions

Serve the Seafood Linguine Mornay with a side of garlic bread or a fresh green salad for a complete meal. A crisp white wine pairs beautifully with this dish, enhancing the seafood flavors. For a twist, consider serving it alongside Broccoli Scallop Linguine for a delightful seafood feast. A sprinkle of fresh parsley on top adds a nice touch.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 2 days. To reheat, place in a skillet over medium-low heat, adding a splash of milk to loosen the sauce, stirring gently until heated through. Avoid microwaving as it can overcook the seafood and make it rubbery.

Frequently Asked Questions

Can I use frozen shrimp for this recipe?

Yes, frozen shrimp can be used, but make sure to thaw them completely before cooking. Rinse them under cold water until defrosted, then pat dry to avoid excess moisture in the dish. This will help maintain the sauce's consistency and prevent it from becoming watery.

What type of pasta can I substitute for linguine?

If you don’t have linguine, fettuccine or spaghetti are excellent substitutes. You can also use gluten-free pasta if needed. Just ensure to adjust the cooking time according to the pasta type you choose to maintain the perfect texture.

Can I add other vegetables to the dish?

Absolutely! Feel free to add vegetables like bell peppers, spinach, or zucchini to increase the nutritional value and flavor. Just sauté them along with the broccoli and mushrooms until they are tender but still vibrant.
