- Heat butter in a saucepan.
- Whisk in flour and cook, stirring constantly, about 2 minutes, without letting it take on color.
- Remove from heat and pour in chicken broth, whisking to blend well.
- Return to heat, bring to a slow boil, stirring.
- Reduce heat and cook, stirring, until sauce is smooth and thickened, about 5 minutes.
- Add Worcestershire sauce, salt, Tabasco, garlic, onion, and mushrooms; cook over low heat for 10 to 15 minutes or until onion is tender.
- Stir in crabmeat and shrimp; heat through.
- Taste and adjust seasoning as needed.
- Just before serving, stir in sour cream and heat, avoiding boiling.
- Serve over rice or in patty shells.
