Ingredients

  • 1/2 lb. pearl onions
  • 1 cup thinly sliced onions
  • 1/2 cup thinly sliced carrots
  • 1/2 cup thinly sliced celery
  • 2 Tbsp. butter or margarine, divided
  • 6 boneless skinless chicken breast halves
  • 1 cup white wine or chicken broth
  • 1 1/3 cups chicken broth
  • 1 Tbsp. fresh parsley, minced
  • 1 tsp. salt
  • 1 tsp. dried thyme
  • 1/8 tsp. pepper
  • 1 bay leaf
  • 3 Tbsp. flour
  • 1/2 cup evaporated skim milk
  • 1/2 lb. fresh mushrooms, quartered

Instructions

  1. Bring 6 cups of water to a boil in a Dutch oven or large kettle. Add pearl onions and boil for 3 minutes.
  2. Drain and rinse onions in cold water; peel and set aside.
  3. In the same pan, sauté sliced onions, carrots, and celery in 1 tablespoon of butter. Remove vegetables and set aside on a serving platter.
  4. Add chicken breasts to the pan; brown on both sides. Remove and keep warm.
  5. Add white wine to the pan; simmer until reduced to 1/2 cup.
  6. Stir in salt, dried thyme, pepper, bay leaf, and chicken broth.
  7. Return chicken to the pan; cover and simmer for 5 minutes or until chicken is cooked through.
  8. Remove chicken to a vegetable serving platter; keep warm.
  9. Combine flour and evaporated skim milk until smooth; gradually stir into the pan.
  10. Bring to a boil; cook and stir for 2 minutes until thickened.
  11. Return sautéed vegetables to the pan, remove from heat, cover, and set aside.
  12. In a non-stick skillet, sauté reserved pearl onions and quartered mushrooms with remaining butter until tender.
  13. Add sautéed pearl onions and mushrooms to the serving platter with chicken and vegetables.
  14. Remove bay leaf from the sauce. Pour sauce over chicken and vegetables before serving.
