Ingredients

  • 5 large plum tomatoes
  • 1 1/2 large peeled carrots
  • 1 large bunch cilantro leaves
  • 2 fresh jalapenos
  • 2 cloves garlic
  • 1/4 green pepper
  • 1/4 red pepper
  • 2 radishes
  • 2 scallions
  • 1/4 cucumber
  • 12 oz. tomato paste
  • 1 tsp. salt
  • 1 Tbsp. chili powder
  • 6 Tbsp. cider vinegar
  • 1/2 tsp. cayenne
  • 1/2 oz. Tabasco

Instructions

  1. Process the tomatoes, carrots, cilantro, jalapenos, garlic, green pepper, red pepper, radishes, scallions, and cucumber in a food processor until well blended.
  2. In a large bowl, combine the processed mixture with tomato paste, salt, chili powder, cider vinegar, cayenne, and Tabasco.
  3. If the salsa is too thick, add some canned plum tomatoes and their juice to achieve desired consistency.
  4. Serve with tortilla chips.
