Ingredients

  • 1 small head lettuce, shredded or chopped
  • 3/4 cup chopped celery
  • 1/3 cup chopped red pepper
  • 1/3 cup chopped green pepper
  • 8 canned and sliced water chestnuts
  • 1/3 cup carrot shreds
  • 10 oz frozen peas
  • 2 cups mayonnaise
  • 1 tablespoon sugar
  • 1/2 pound bacon, cooked and crumbled
  • 1/3 cup grated Romano cheese
  • 1/3 cup grated Parmesan cheese
  • 1 hard-cooked egg
  • 1 tomato, cut into wedges

Instructions

  1. Layer the shredded lettuce, chopped celery, chopped red pepper, chopped green pepper, sliced water chestnuts, carrot shreds, and frozen peas in a large salad bowl in the order given.
  2. Combine mayonnaise and sugar; spread this mixture evenly over the layered vegetables to cover.
  3. Sprinkle the grated Romano and Parmesan cheeses over the mayonnaise layer.
  4. Cover the salad with plastic wrap and chill in the refrigerator for at least 8 hours or overnight.
  5. Before serving, garnish with sliced hard-cooked egg, crumbled bacon, and tomato wedges.
  6. Do not toss the salad before serving.
