Ingredients

  • 1 1/2 to 2 lb. ground beef
  • 1 chopped onion
  • 1 chopped bell pepper
  • 1 small jar pimentos
  • 1 can mushrooms
  • 1 can cream corn
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 (12 oz.) pkg egg noodles
  • salt
  • pepper

Instructions

  1. Saute onion and bell pepper in a small amount of oil until tender.
  2. Add ground beef and cook until browned; season with salt, pepper, and garlic to taste.
  3. Stir in pimentos, mushrooms, cream corn, cream of mushroom soup, cream of chicken soup, and half of the shredded cheddar cheese.
  4. Simmer for a few minutes to combine flavors.
  5. Mix the beef mixture with cooked egg noodles.
  6. Pour the mixture into a large casserole dish.
  7. Top with the remaining shredded cheddar cheese.
  8. Bake at 350°F (175°C) until the cheese is melted and bubbly, about 20-25 minutes.
