- Saute onion and bell pepper in a small amount of oil until tender.
- Add ground beef and cook until browned; season with salt, pepper, and garlic to taste.
- Stir in pimentos, mushrooms, cream corn, cream of mushroom soup, cream of chicken soup, and half of the shredded cheddar cheese.
- Simmer for a few minutes to combine flavors.
- Mix the beef mixture with cooked egg noodles.
- Pour the mixture into a large casserole dish.
- Top with the remaining shredded cheddar cheese.
- Bake at 350°F (175°C) until the cheese is melted and bubbly, about 20-25 minutes.
