  • 4 small zucchini
  • 1 small onion

  • 4 eggs

  1. In a heavy 6 or 7-inch skillet, heat 2 tablespoons of oil and sauté the onion and garlic until tender, stirring.
  2. Increase heat, add shredded zucchini and sauté until almost tender, stirring frequently.
  3. In a bowl, beat the eggs; stir in grated Parmesan, salt, and pepper.
  4. Add the egg mixture to the zucchini mixture, reducing heat to low.
  5. Cover and cook until eggs are set on the bottom.
  6. Loosen sides and bottom of the frittata, then invert onto a warm plate.
  7. Add the remaining 1 tablespoon of oil to the skillet.
  8. Slide the frittata back into the skillet.
  9. Cover and cook until the eggs are fully set.
  10. Cut into wedges and serve.
