Ingredients

  • 1/2 c. butter
  • 1 1/2 c. onion, chopped
  • 1/2 c. green bell pepper, chopped
  • 1/2 c. celery, chopped
  • 3 cloves garlic, minced
  • 2 Tbsp. flour
  • 1/2 c. Bloody Mary mix
  • 2 heaping Tbsp. cream of celery soup
  • 1 tsp. salt
  • 1 lb. raw peeled shrimp
  • 1/2 tsp. cayenne pepper
  • 1/8 tsp. Tabasco
  • lemon juice

Instructions

  1. In a 2-quart dish, melt butter.
  2. Add chopped onion, green bell pepper, celery, and minced garlic; sauté on high for 15 minutes.
  3. Stir in flour and Bloody Mary mix.
  4. Add cream of celery soup and salt; mix well.
  5. Microwave on high for 5 minutes.
  6. Add raw peeled shrimp to the dish.
  7. Microwave on high for 8 minutes or until shrimp are pink and tender.
  8. Stir once or twice during cooking.
  9. Squeeze a small amount of lemon juice over the etouffee.
  10. Serve over rice.
