Shrimp Etouffee(Microwave)

Ingredients
- 1/2 c. butter ⓘ
- 1 1/2 c. onion, chopped ⓘ
- 1/2 c. green bell pepper, chopped ⓘ
- 1/2 c. celery, chopped ⓘ
- 3 cloves garlic, minced ⓘ
- 2 Tbsp. flour ⓘ
- 1/2 c. Bloody Mary mix ⓘ
- 2 heaping Tbsp. cream of celery soup ⓘ
- 1 tsp. salt ⓘ
- 1 lb. raw peeled shrimp
- 1/2 tsp. cayenne pepper ⓘ
- 1/8 tsp. Tabasco ⓘ
- lemon juice ⓘ
Instructions
- In a 2-quart dish, melt butter.
- Add chopped onion, green bell pepper, celery, and minced garlic; sauté on high for 15 minutes.
- Stir in flour and Bloody Mary mix.
- Add cream of celery soup and salt; mix well.
- Microwave on high for 5 minutes.
- Add raw peeled shrimp to the dish.
- Microwave on high for 8 minutes or until shrimp are pink and tender.
- Stir once or twice during cooking.
- Squeeze a small amount of lemon juice over the etouffee.
- Serve over rice.
