  • 1 lb. pasta
  • 1 stick butter
  • 2 1/2 Tbsp. fresh ginger
  • 1 1/2 Tbsp. yellow mustard seeds
  • 1/3 c. dry-roasted cashews (unsalted)
  • 1 1/2 Tbsp. shredded coconut
  • 1/3 c. chopped cilantro

  • 1/4 c. olive oil
  • 1 1/2 Tbsp. fresh ginger
  • 1/3 c. scallions, sliced
  • 1 1/2 Tbsp. lime juice
  • salt

Instructions

  1. Grate or cut the ginger into fine strips.
  2. Heat a large frying pan and add butter, 2 1/2 tablespoons ginger, mustard seeds, and cashews.
  3. Sauté for 2 minutes.
  4. Add pre-cooked pasta, shredded coconut, and chopped cilantro.
  5. Sauté over medium heat until hot. Set aside and keep warm.
  6. In another large frying pan, heat olive oil and add 1 1/2 tablespoons ginger.
  7. Sauté for 30 seconds.
  8. Add large pre-cooked shrimp, sliced scallions, and lime juice.
  9. Sauté until hot.
  10. Season with salt and pepper to taste.
  11. Serve the shrimp mixture over the hot pasta and garnish with lime wedges and cilantro.
