Ingredients

  • 1 Tbsp. oil
  • 1 1/2 lbs. beef cubes
  • 1 pkg. medium mushrooms, cut in half
  • 4 large carrots, cut into 2-inch pieces
  • 3 c. water
  • 8 oz. shallots, peeled
  • 1 can beef broth
  • 1/2 c. dry red wine
  • 2 Tbsp. parsley, chopped

Instructions

  1. In a saucepan over medium heat, cook beef cubes in oil until browned on all sides.
  2. Stir in mushrooms, carrots, shallots, beef broth, wine, and water.
  3. Heat to boiling.
  4. Reduce heat to low, cover the pot, and simmer for one hour.
  5. Top with parsley and serve.
