Ingredients

  • 1 1/4 lb. lean ground beef
  • 1 small onion, finely chopped
  • 1/4 cup dry bread crumbs
  • 1 egg, beaten
  • 1 teaspoon chopped parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup ketchup

Instructions

  1. Combine all ingredients except 1/4 cup of ketchup in a large mixing bowl.
  2. Mix well with hands and form a firm round loaf.
  3. Place the loaf in a microwave-safe round casserole dish or similar.
  4. Spread the remaining 1/4 cup ketchup on top of the meat loaf.
  5. Microwave on High, uncovered, for 21 minutes or until done, rotating the plate after 7 minutes.
