Ingredients

  • 2 1/2 to 3 lb. chicken, cut-up
  • 2 Tbsp. oil
  • 3/4 c. long grain rice, uncooked
  • 1/2 c. chopped onion
  • 2 tsp. salt
  • 1 tsp. poultry seasoning
  • 8 oz. fresh mushrooms, sliced
  • 4 medium carrots, bias cut, 1/2-inch thick
  • 2 c. water
  • paprika

Instructions

  1. In a 10-inch skillet, brown the chicken on all sides in hot oil, about 15 minutes.
  2. Remove the chicken pieces from the skillet.
  3. Drain all but 2 tablespoons of fat from the skillet.
  4. Add rice, chopped onion, salt, and poultry seasoning to the skillet. Cook and stir until the rice is lightly browned.
  5. Add sliced mushrooms, bias-cut carrots, and water to the skillet.
  6. Place the cooked chicken on top of the rice mixture.
  7. Season the chicken with additional salt and pepper.
  8. Sprinkle with paprika, cover, and simmer for 45 minutes or until the chicken and rice are tender.
