Ingredients

  • 1/2 cup cooked rice
  • 3/4 pound ground beef

  • 12 oz can whole kernel corn, drained
  • 6 large green peppers
  • 6 medium carrots, peeled and cut

  • 1/2 cup water

Instructions

  1. While rice is cooking, in a medium skillet, brown the ground beef until crumbly; drain excess fat.
  2. Add minced onions to the skillet; cook until the onions are soft.
  3. Remove from heat.
  4. Mix in A.1. steak sauce, salt, pepper, tomato sauce, drained corn, and cooked rice.
  5. Cut the tops off the green peppers, remove seeds and membranes, and discard.
  6. Fill each pepper with the meat and rice mixture.
  7. In a 10-inch skillet, place the stuffed peppers and peeled carrots.
  8. Add butter and water to the skillet.
  9. Cover and simmer for 30 to 40 minutes, or until the carrots are tender.
