Ingredients

  • 1 1/2 cups white sugar
  • 2 cups all-purpose flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 small can crushed pineapple in heavy syrup
  • 1 cup brown sugar
  • 1 cup broken nutmeats
  • 3/4 cup white sugar
  • 1 1/2 sticks margarine

Instructions

  1. Mix together the dry ingredients: sugar, flour, soda, and salt.
  2. Add eggs and crushed pineapple in heavy syrup; mix well.
  3. Pour the batter into a greased baking pan.
  4. Bake at 350°F (175°C) for about 30 minutes or until a toothpick inserted in the center comes out clean.
  5. While the cake is baking, prepare the glaze: combine 1 1/2 cups white sugar, 1/2 cup brown sugar, and 3/4 cup white sugar with 1 1/2 sticks margarine in a saucepan.
  6. Bring the mixture to a boil, then let it boil for 5 minutes.
  7. Remove from heat and add 1 teaspoon vanilla to the glaze.
  8. Pour the hot glaze over the hot cake as soon as it comes out of the oven.
