Slimming Chicken Cacciatore

Ingredients
- 3/4 cup sliced fresh mushrooms ⓘ
- 1/2 can (8 oz.) chopped tomatoes ⓘ
- 1/2 cup chopped green pepper ⓘ
- 1/4 cup chopped onion ⓘ
- 3 tablespoons dry red wine ⓘ
- 1 clove garlic, minced ⓘ
- 1/2 teaspoon dried crushed oregano ⓘ
- 1/2 teaspoon salt ⓘ
- 2 whole chicken breasts, skinned, boned and halved ⓘ
- 2 teaspoons cornstarch ⓘ
- 2 tablespoons cold water ⓘ
Instructions
- Combine sliced mushrooms, chopped tomatoes, green pepper, onion, red wine, minced garlic, oregano, salt, and pepper in a pan.
- Place the chicken breasts on top of the vegetable mixture.
- Sprinkle the chicken with salt.
- Bring to a boil, then reduce heat and simmer for 25 to 30 minutes.
- Remove the chicken from the pan and sprinkle with paprika.
- Mix cornstarch with cold water to make a slurry.
- Stir the cornstarch mixture into the skillet with the sauce.
- Cook and stir until the sauce thickens, about 1 minute.
- Spoon the sauce over the chicken and serve.
