Ingredients

  • 3/4 cup sliced fresh mushrooms
  • 1/2 can (8 oz.) chopped tomatoes
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped onion
  • 3 tablespoons dry red wine
  • 1 clove garlic, minced
  • 1/2 teaspoon dried crushed oregano
  • 1/2 teaspoon salt
  • 2 whole chicken breasts, skinned, boned and halved
  • 2 teaspoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. Combine sliced mushrooms, chopped tomatoes, green pepper, onion, red wine, minced garlic, oregano, salt, and pepper in a pan.
  2. Place the chicken breasts on top of the vegetable mixture.
  3. Sprinkle the chicken with salt.
  4. Bring to a boil, then reduce heat and simmer for 25 to 30 minutes.
  5. Remove the chicken from the pan and sprinkle with paprika.
  6. Mix cornstarch with cold water to make a slurry.
  7. Stir the cornstarch mixture into the skillet with the sauce.
  8. Cook and stir until the sauce thickens, about 1 minute.
  9. Spoon the sauce over the chicken and serve.
