Ingredients

  • 1/2 c. white flour
  • 2 1/4 c. corn meal
  • 1 Tbsp. sugar
  • 1 1/4 tsp. salt
  • 1 1/4 tsp. baking powder
  • 2 1/4 c. grated cheese
  • 1/2 c. oil
  • 2 medium onions
  • 2 eggs
  • 1 1/2 c. milk

Instructions

  1. Combine flour, corn meal, sugar, salt, baking powder, and grated cheese in a bowl and set aside.
  2. Saute oil and onions in a skillet until onions are clear.
  3. Beat eggs and milk together in a small bowl.
  4. Add the sautéed onions with egg-milk mixture to the dry ingredients.
  5. Stir until blended.
  6. Pour the batter into a greased 9 x 12-inch pan.
  7. Bake in a 375°F (190°C) oven for 30 minutes.
