Ingredients

  • 1 lb. loose Italian sausage (sweet or hot)
  • 1 c. minced onions
  • 2 cloves garlic
  • 5 c. beef broth
  • 2 c. water
  • 1/2 c. red wine
  • 2 c. peeled tomatoes (large can)
  • 1 c. sliced carrots
  • 1 tsp. basil
  • 1/2 tsp. oregano
  • 8 oz. can tomato sauce
  • 1 1/2 c. sliced zucchini
  • 8 oz. tortellini
  • 3 Tbsp. parsley
  • 10 peppercorns
  • 1 can chickpeas with liquid
  • 1 can Italian green beans, drained

Instructions

  1. Brown the sausage in a large pot, breaking it into small pieces. Add minced onions and garlic, and sauté until fragrant.
  2. Pour in beef broth, water, red wine, and add sliced carrots, basil, oregano, peeled tomatoes, tomato sauce, parsley, and peppercorns. Bring to a boil, then reduce heat and simmer for 1 hour.
  3. Add sliced zucchini and tortellini to the soup. Continue to simmer for 30 to 40 minutes.
  4. Stir in chickpeas (with liquid) and drained green beans during the last 10 minutes of cooking.
