Ingredients

  • 3 tablespoons butter
  • 4 large onions, thinly sliced
  • 1 teaspoon granulated sugar
  • 5 cups beef stock
  • 3 sprigs fresh thyme
  • 3 parsley sprigs
  • 2 tablespoons brandy (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 slices day-old French bread, toasted
  • 3/4 cup grated Gruyère cheese

Instructions

  1. Melt butter in a large, deep pot over medium heat.
  2. Add sliced onions and sugar, stirring to coat with butter.
  3. Cook for 30 minutes, stirring occasionally, until onions are golden brown; do not burn.
  4. Stir in beef stock and bring to a boil.
  5. Reduce heat to a simmer and add thyme, parsley, brandy (if using), salt, and pepper.
  6. Simmer for 20 minutes.
  7. Remove herb sprigs before serving.
  8. Ladle soup into bowls, top with toasted bread slices and grated Gruyère cheese, then serve.
