Ingredients

  • 2 eggs
  • 2 1/2 cups plain flour

  • 3/4 cup brown sugar
  • 2 teaspoons soda
  • 1/2 teaspoon nutmeg
  • 3/4 cup molasses
  • 2 teaspoons ginger
  • 1/2 teaspoon baking powder
  • 3/4 cup melted shortening
  • 1 1/2 teaspoons cinnamon
  • 1 cup boiling water

Instructions

  1. Add beaten eggs to sugar, molasses, and melted shortening.
  2. Mix and sift the dry ingredients (flour, spices, baking powder, baking soda, salt) and add to the wet mixture.
  3. Gradually add the hot boiling water and stir until smooth.
  4. Pour the batter into a shallow pan or muffin tins.
