Ingredients

  • 1 lb. boneless veal, cut in cubes
  • 1/4 c. unsifted all-purpose flour
  • 1/4 c. butter or margarine
  • 1/2 c. finely chopped onion
  • 2 (12 oz.) frozen okra, thawed and cut into 1-inch pieces
  • 1 (1 lb. 12 oz.) can tomatoes (undrained)
  • 1 c. finely chopped green pepper
  • 4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. dried thyme leaves
  • 1 tsp. fine herbs

Instructions

  1. Coat veal cubes well in flour.
  2. Slowly heat butter in an 8-quart kettle.
  3. Brown veal cubes well, turning on all sides.
  4. Add onion, okra, and tomatoes.
  5. Cover and cook 15 minutes.
  6. Add 2 quarts of water and the remaining ingredients.
  7. Cover and bring to a boil.
  8. Reduce heat and simmer for 2 hours, stirring occasionally.
