Ingredients

  • 1 lb. boneless chicken

  • juice of one lime
  • 1 tsp. cayenne pepper
  • 1 small onion, chopped
  • 1 rib celery, chopped
  • 1/4 lb. jicama, peeled and diced
  • 4 large dates, chopped
  • 1/4 c. pecans
  • 1/4 c. cilantro
  • 1/2 c. mayonnaise

Instructions

  1. Cut the chicken into 1-inch chunks.
  2. Toss the chicken with olive oil, lime juice, and cayenne pepper.
  3. Optionally season with salt and pepper to taste.
  4. Place the chicken mixture into a pan and bake in a preheated oven at 375°F for 15 minutes until cooked.
  5. Drain and cool the cooked chicken.
  6. Add the cooled chicken to a large bowl with chopped onion, chopped celery, diced jicama, chopped dates, pecans, cilantro, and mayonnaise.
  7. Mix well and serve.
