Ingredients

  • 2 (10 oz.) pkg. frozen, chopped spinach
  • 4 Tbsp. butter or margarine
  • 2 Tbsp. flour
  • 1 small onion, chopped
  • 1 stalk celery, chopped fine
  • 1 c. liquid (spinach cooking water plus enough water or milk to make 1 c.)
  • pepper to taste
  • 3/4 tsp. garlic salt
  • 10 oz. grated sharp Cheddar cheese
  • 1 tsp. Worcestershire sauce
  • 1 (4 oz.) can mild green chilies, chopped

Instructions

  1. Preheat oven to 350°.
  2. Cook spinach according to package directions; drain, reserving liquid.
  3. Add enough water or milk to the reserved liquid to make 1 cup; set aside.
  4. Saute onion and celery in butter or margarine until soft.
  5. Blend in flour and cook for at least 1 minute, stirring.
  6. Add liquid slowly, stirring constantly to avoid lumps. Pour this mixture onto the drained spinach.
  7. Add remaining ingredients and mix thoroughly.
  8. Pour into greased baking dish. Bake for 20 minutes in the oven or place in the microwave for 8 to 10 minutes.
