Ingredients

  • 2 Tbsp. oil
  • 1 large onion, thinly sliced
  • 1 clove garlic, minced
  • 2 medium green peppers, thin strips
  • 1 medium red pepper, thin strips
  • 2 1/2 c. sliced mushrooms
  • 1 can whole tomatoes, coarsely chopped
  • 1 1/2 tsp. dried basil
  • 1/4 tsp. pepper
  • 8 oz. thin spaghetti
  • 2 Tbsp. grated Parmesan cheese

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add sliced onion and minced garlic; sauté for 1 minute.
  3. Add green peppers, red pepper, and sliced mushrooms; sauté for 2 minutes.
  4. Stir in chopped tomatoes with juice, dried basil, and pepper.
  5. Bring the mixture to a boil, then reduce heat to low and simmer for 5 minutes.
  6. Meanwhile, cook the spaghetti according to package instructions until al dente.
  7. Toss the cooked spaghetti with the sauce and grated Parmesan cheese.
  8. Serve immediately.
