- 1 large onion, thinly sliced ⓘ
- 1 clove garlic, minced ⓘ
- 2 medium green peppers, thin strips ⓘ
- 1 medium red pepper, thin strips ⓘ
- 2 1/2 c. sliced mushrooms ⓘ
- 1 can whole tomatoes, coarsely chopped ⓘ
- 1 1/2 tsp. dried basil ⓘ
- 1/4 tsp. pepper ⓘ
- 8 oz. thin spaghetti ⓘ
- 2 Tbsp. grated Parmesan cheese ⓘ
Instructions
- Heat oil in a large skillet over medium-high heat.
- Add sliced onion and minced garlic; sauté for 1 minute.
- Add green peppers, red pepper, and sliced mushrooms; sauté for 2 minutes.
- Stir in chopped tomatoes with juice, dried basil, and pepper.
- Bring the mixture to a boil, then reduce heat to low and simmer for 5 minutes.
- Meanwhile, cook the spaghetti according to package instructions until al dente.
- Toss the cooked spaghetti with the sauce and grated Parmesan cheese.
