Spaghetti With Haddock

- Cut each block of haddock into 3 pieces and set aside.
- Heat oil in a 12-inch skillet or electric frying pan over medium heat for 5 minutes or until hot.
- Add sliced mushrooms and minced garlic; sauté for 10 minutes or until tender.
- Remove mushroom and garlic mixture from the skillet and set aside.
- Combine mushroom soup, milk, and 1 cup of grated Parmesan cheese in the skillet and stir until blended.
- Add cooked and drained spaghetti to the skillet and toss until coated.
- Arrange the haddock pieces on top of the spaghetti.
- Add the sautéed mushrooms and spinach mixture on top of the fish.
- Cover and cook over low heat (220°F) for 10 minutes.
- Sprinkle with the remaining 1/4 cup Parmesan cheese, cover, and simmer for 10 minutes more or until the fish flakes with a fork.
