Ingredients

  • 2 (1 lb.) packages frozen haddock fillets, thawed
  • 3 Tbsp. cooking oil
  • 1/2 lb. fresh mushrooms, sliced
  • 1 clove garlic, minced
  • 2 (10 3/4 oz.) cans condensed cream of mushroom soup
  • 1 1/4 cup milk
  • 1 1/4 cup grated Parmesan cheese
  • 8 oz. spaghetti, cooked and drained

Instructions

  1. Cut each block of haddock into 3 pieces and set aside.
  2. Heat oil in a 12-inch skillet or electric frying pan over medium heat for 5 minutes or until hot.
  3. Add sliced mushrooms and minced garlic; sauté for 10 minutes or until tender.
  4. Remove mushroom and garlic mixture from the skillet and set aside.
  5. Combine mushroom soup, milk, and 1 cup of grated Parmesan cheese in the skillet and stir until blended.
  6. Add cooked and drained spaghetti to the skillet and toss until coated.
  7. Arrange the haddock pieces on top of the spaghetti.
  8. Add the sautéed mushrooms and spinach mixture on top of the fish.
  9. Cover and cook over low heat (220°F) for 10 minutes.
  10. Sprinkle with the remaining 1/4 cup Parmesan cheese, cover, and simmer for 10 minutes more or until the fish flakes with a fork.
