Ingredients

  • 3 to 4 lb. spareribs
  • 1 medium onion
  • 1 stalk celery
  • 4 to 5 black peppercorns
  • salt to taste
  • 1/2 cup chili sauce
  • 1/4 cup brown sugar
  • 1/4 cup vinegar
  • 2 cloves garlic
  • 1 1/2 tsp. prepared horseradish
  • 1 tsp. chili powder

Instructions

  1. Cut the spareribs into serving size pieces.
  2. Place the ribs in a large Dutch oven.
  3. Add water to cover the ribs, along with the quartered onion, quartered celery, black peppercorns, and salt. Bring to a boil; cover and reduce heat. Simmer for 40 minutes.
  4. Drain the ribs well.
  5. Place the ribs, meaty side down, on a rack in a roasting pan.
  6. Combine chili sauce with the remaining ingredients: brown sugar, vinegar, crushed garlic, prepared horseradish, and chili powder. Stir well.
  7. Brush half of the sauce on the ribs.
  8. Bake uncovered at 375°F for 25 minutes.
  9. Turn the ribs over and baste with the remaining sauce.
  10. Bake for an additional 50 minutes or until the ribs are tender.
