Special Chicken Stuffing

A hearty, savory chicken stuffing casserole with tender chicken, flavorful herbs, and cheesy topping, perfect for family dinners or holiday gatherings.

Ingredients

  • 2 small or 1 large pkg. Stove Top stuffing
  • 10 slices bread
  • 3/4 cup melted butter
  • 1 cup water
  • 2 1/2 cups cooked chicken
  • 1/2 cup onion
  • 1 cup celery
  • 3/4 cup mayonnaise
  • 3/4 teaspoon salt
  • 3 eggs
  • 1 1/2 cups milk
  • 1 can chicken or mushroom soup

Instructions

  1. Combine the stove top stuffing, bread slices, melted butter, and water and toss until moist.
  2. Put half of the stuffing mixture in the bottom of a greased 15 x 18-inch pan.
  3. Mix the chopped cooked chicken, chopped onion, chopped celery, mayonnaise, salt, and eggs, then set aside.
  4. Layer the chicken mixture over the stuffing in the pan, then top with the remaining stuffing mixture.
  5. Beat the eggs with 1 1/2 cups of milk and pour over the assembled mixture in the pan.
  6. Refrigerate the casserole overnight.
  7. Remove from refrigerator 1 hour before baking.
  8. Prepare the chicken or mushroom soup, diluted with one can of water or two cups of chicken broth, and pour over the casserole.
  9. Bake at 350°F for 40 minutes, uncovered.
  10. Grate mild or sharp cheese over the top and return to oven for an additional 10 minutes before serving.
