Ingredients

  • 6 boneless chicken breasts
  • 3 beaten eggs
  • 2 cups bread crumbs
  • 1 teaspoon salt
  • 1 tablespoon parsley
  • 1/2 teaspoon garlic powder
  • vegetable oil
  • 8 ounces fresh mushrooms sliced
  • 6 slices Muenster cheese
  • 1 cup chicken broth

Instructions

  1. Marinate chicken in beaten eggs for 2 hours in the refrigerator.
  2. Combine bread crumbs, parsley, salt, and garlic powder in a plastic bag.
  3. Shake chicken in bread crumb mixture and brown in vegetable oil.
  4. Drain and place chicken in a 13 x 9 x 2-inch baking dish.
  5. Cover with sliced mushrooms and top with cheese slices.
  6. Pour chicken broth on top.
  7. Can be made ahead of time; pour broth on just before baking.
  8. Bake covered at 350°F for 30 minutes.
