  • 1 Tbsp. plus 2 tsp. chopped fresh parsley

Instructions

  1. Combine chicken, carrot, onion, celery, bay leaf, and water in a large pan.
  2. Bring to a boil; cover and reduce heat.
  3. Simmer for 25 minutes or until the chicken is tender.
  4. Remove the chicken from the broth and set aside.
  5. Skim fat from the broth, reserving the broth.
  6. Bone the chicken and cut into bite-sized pieces.
