Ingredients

  • 1 qt. buttermilk
  • 1/2 tsp. salt
  • 1/2 tsp. ground red pepper
  • 1 tsp. freshly ground pepper
  • 4 cloves garlic, minced
  • 9 lb. chicken pieces
  • 2 1/2 c. all-purpose flour
  • 2 tsp. salt
  • 2 tsp. freshly ground black pepper
  • 2 tsp. ground red pepper
  • 1 tsp. paprika

Instructions

  1. Combine buttermilk, salt, ground red pepper, freshly ground pepper, and minced garlic in a large mixing bowl.
  2. Add chicken pieces to the mixture, turning to coat thoroughly.
  3. Cover and refrigerate for 8 hours or overnight.
  4. Drain the chicken, discarding the buttermilk mixture.
  5. Combine all-purpose flour, salt, black pepper, ground red pepper, and paprika in a shallow dish.
  6. Dredge the chicken in the flour mixture, shaking off any excess.
  7. Let the coated chicken stand for 30 minutes.
  8. Pour oil to a depth of 1/2-inch into a large skillet and heat to 350°F.
  9. Add one-third of the chicken pieces to the hot oil and fry for 20 to 25 minutes, turning once, until golden and cooked through.
  10. Drain the fried chicken on paper towels.
  11. Repeat frying with the remaining chicken in batches.
  12. Garnish with desired toppings, if desired.
