Ingredients

  • 2 qt. corn bread crumbs
  • 1 qt. toasted bread crumbs
  • 2 slightly beaten eggs
  • 1 c. cooked giblets
  • 1 (10 3/4 oz.) cream of mushroom soup
  • 1 large onion
  • 3 stalks celery
  • 1 medium bell pepper
  • 1 clove garlic
  • stock from giblets
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1/2 tsp. black pepper
  • 1/2 c. chopped parsley
  • 1/2 tsp. sage

Instructions

  1. Saute onion, garlic, and celery in vegetable oil until clear.
  2. Mix bread crumbs and add finely chopped green pepper and parsley.
  3. Add cooked giblets, beaten eggs, and cream of mushroom soup to the mixture.
  4. Incorporate the sauteed vegetables into the mixture.
  5. Mix thoroughly to combine all ingredients.
  6. Add giblet stock to achieve a soft consistency.
  7. Fill the fowl cavity with the stuffing, not stuffing too tightly.
  8. Place the remaining stuffing in a greased baking dish.
  9. Cover the dish and bake for 35 minutes at 450°F.
  10. Serve with roasted fowl or pork chops.
