Ingredients

  • 1/2 cup shortening
  • 1 1/4 cups brown sugar
  • 2 eggs
  • 1 1/2 cups cooked pumpkin
  • 1 teaspoon vanilla
  • 1 teaspoon lemon extract
  • 1 cup raisins
  • 1 cup nuts
  • 2 1/2 cups sifted flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon

Instructions

  1. Cream shortening until smooth.
  2. Add sugar gradually and continue beating until mixture is light and fluffy.
  3. Add beaten eggs and cooked pumpkin; blend well.
  4. Stir in vanilla and lemon extract.
  5. In a separate bowl, sift together flour, baking powder, salt, ginger, nutmeg, and cinnamon.
  6. Add dry ingredients to pumpkin mixture; mix well.
  7. Chill dough in refrigerator for at least 1 hour.
  8. Drop teaspoonfuls of dough onto greased cookie sheets, about 2 inches apart.
  9. Bake at 375°F (190°C) for about 15 minutes or until golden.
  10. Remove from oven and cool on wire racks.
