Ingredients

  • 4 c. fresh raspberries
  • 2 sticks butter, softened
  • 2 c. sugar
  • 3 eggs, lightly beaten
  • 3 c. flour
  • 1 Tbsp. cocoa
  • 1/4 tsp. salt
  • 2 tsp. baking soda
  • 1 Tbsp. cinnamon
  • 1 tsp. ground cloves
  • 1 tsp. allspice
  • 1 c. raisins
  • 1 c. nuts, chopped

Instructions

  1. Gently rinse the raspberries; pat dry and set aside.
  2. In a large mixing bowl, cream the softened butter and sugar.
  3. Beat in the eggs until well combined.
  4. Puree 1 cup of the berries in a blender, then stir the pureed berries and juice into the butter-sugar mixture.
  5. Fold in the remaining whole berries, raisins, and chopped nuts.
  6. In a separate bowl, whisk together the flour, cocoa, salt, baking soda, cinnamon, ground cloves, and allspice.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Pour the batter into a greased baking pan.
  9. Bake at 350°F (175°C) for approximately 40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before serving.
