Ingredients

  • 2 pkg. frozen (10 oz.) spinach, cooked and drained very well
  • 2 c. Pepperidge Farm stuffing
  • 2 medium onions, chopped
  • 6 beaten eggs
  • 3/4 c. melted butter
  • 1/2 c. Parmesan cheese
  • 1/2 c. crumbled Feta cheese
  • 1 Tbsp. garlic salt
  • 1 tsp. black pepper
  • 1/2 tsp. thyme

Instructions

  1. Combine cooked and drained spinach with stuffing, chopped onions, beaten eggs, melted butter, Parmesan cheese, Feta cheese, garlic salt, black pepper, and thyme (if using).
  2. Mix well until all ingredients are thoroughly incorporated.
  3. Shape mixture into small balls or desired shapes and place on a baking sheet lined with parchment paper.
  4. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until golden brown and firm.
  5. Serve warm as an appetizer or side dish.
