Ingredients

  • 10 oz. frozen spinach, cooked
  • 16 oz. cottage cheese
  • 1 cup crushed bread crumbs
  • 2 eggs, beaten
  • 1/4 cup mushrooms
  • 1/2 cup chopped green pepper
  • 1 cup sour cream
  • 1 1/2 cups spaghetti sauce
  • 16 oz. sliced Mozzarella cheese
  • 1 teaspoon basil
  • 1/2 cup Parmesan cheese

Instructions

  1. Combine cooked spinach, cottage cheese, bread crumbs, beaten eggs, chopped mushrooms, and chopped green pepper in a bowl.
  2. Pour the mixture into a buttered 9 x 13-inch casserole dish.
  3. Spread sour cream evenly over the top of the casserole.
  4. Spread half of the spaghetti sauce over the sour cream layer.
  5. Add a layer of half the sliced mozzarella cheese over the sauce.
  6. Repeat with the remaining spaghetti sauce and mozzarella cheese layers.
  7. Sprinkle basil and Parmesan cheese over the top.
  8. Bake at 350°F (175°C) for 30 minutes until bubbly and golden.
