Ingredients

  • 10 oz. dried pepperoni
  • 10 oz. frozen chopped spinach
  • 2 c. Ricotta cheese
  • 1 1/2 c. freshly grated Parmesan cheese
  • 1 1/3 c. finely chopped mushrooms
  • 1/4 c. finely chopped onions
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 2 large eggs

Instructions

  1. Place one pepperoni slice in the bottom of each lightly greased miniature muffin cup.
  2. Cut remaining pepperoni slices into 48 wedges.
  3. Combine thawed and drained spinach, Ricotta cheese, Parmesan cheese, chopped mushrooms, chopped onions, dried oregano, salt, and lightly beaten eggs in a bowl.
  4. Spoon the mixture into the muffin cups over the pepperoni slices.
  5. Bake at 375°F for 20 to 25 minutes or until lightly browned.
  6. Cool for 10 minutes.
  7. Gently remove the bites from the muffin pan and place on a serving plate.
  8. Top each with a dollop of sour cream and a pepperoni wedge.
  9. Serve warm or store in freezer for up to 3 months before reheating.
